Forgotten fish: talk and tasting
Welcome to a public conversation about the heroes and anti-heroes of coastal gastronomy. Not only will we be discussing, we will also be tasting Forgotten Fish sourced in local waters! Kålrotsakademin (the Turnip Academy) has out of concern for the ecology of the Baltic Sea, the demise of coastal fishing and the meagre supply of local fish in Swedish supermarkets embarked on a voyage of exploration. In search of a special flavour that can be associated with local fishing grounds they have visited five locations with a strong connection to the Swedish fishing industry. On the way they have tried roach, bullhead, goby, bream and ide as well as a many other species that seldom, perhaps never, end up on our plates. Welcome to share the results of their adventure and participate in a conversation on the future of the Baltic Sea and coastal fishing. Stefan Eriksson (Chef of the Year and the member of the Exceptionell Råvara society will offer the audience a taste of Forgotten Fish.
